RICE, CHICKEN & VEGGIES

Hello people, I have been accused of not updating my blog daily so I promise to step up my game :D. I just want to share a quick but healthy recipe with you guys today. I went over to a friend's for lunch and it was a bank holiday with little or no options as to what to eat since most of the stores were closed however we came up with this and it tasted yummy!

Ingredients:

  • chicken;
  • veggies (mushrooms, broccoli & carrots);
  • basmati rice;
  • sweet corn;
  • Barbecue sauce;
  • spice to marinate chicken and add taste to rice
Method for chicken:
  • wash already cut chicken and remove excess fat;
  • place in a clean bowl and add spices of your choice..my friend added salt, maggi, curry, a little bit of barbecue sauce for some taste and set aside to marinate;
  • place chicken  in oven at 200 degrees celsius for about 20 mins or until fully cooked.
Method for rice & veggies:
  • wash rice and place on fire;
  • add sweetcorn, salt and maggi to cooking rice and leave to boil;
  • in a clean pot, add water and leave on stove to boil;
  • wash veggies and place in boiling water with a little bit of salt and bring to boil for about 5-6 mins depending on how soft you want the veggies to be.
The result is below :) sorry I don't have step by step pictures as this was done a while back but I just thought to share this and give ideas on how creative we can get in the kitchen while trying to keep the weight in check.
