Breakfast: Egg white w/ sauteed mushrooms and avocado

Biola's sister here! Call me Jamie. lol.
I am obsessed w/ healthy eating.. I spend hours everyday googling recipes everyday.
I am pretty sure i am not the only one who finds it hard deciding what to eat for breakfast. So hey! here's a new recipe to add to your breakfast options.


Ingredients: 
- mushrooms (as much as you want)
- baby sweet tomatoes
- egg whites
- butter
- avocado
- thyme
- salt





Steps: 
- separate the yolk from the egg whites: i decided to leave in one yolk for taste
- add salt and whisk the eggs together.
- cut the mushrooms as you desire.






- using two different pans, sweat both pans w/ butter. (medium heat)
- put the eggs in one, and the mushrooms and baby tomatoes in the other
(When sauteing the mushrooms, try and separate them as much as possible  because you don't want them to steam in the water they produce! You want to sautee it NOT steam it! (2 different things))

- sprinkle some thyme in the eggs and also in the mushrooms if you desire. 
- while the eggs are doing their thing, move the mushrooms around w/ a spatula.
- once the eggs look like they are cooked underneath, flip one side over the other and leave it on the heat for like 30 seconds (you want the eggs to still be moist!)

- Once the 30 seconds is over, turn off the heat and serve.
- You can keep the mushrooms on until they have the color you desire. I prefer mine the way the picture shows it because it is still juicy.

(not the prettiest looking egg aye! lol)

- i added avocado on top of the egg (It is so good! the mushy feel of the avocado just lets the egg dissolve perfectly well in your mouth)
