It is Biola..and I am back again...two posts in a week...this is a sign..lol. I wanted to share this quick recipe with you guys. I had this for lunch and it was really good.
Ingredients:
- Coconut milk;
- Rice (I used basmati rice but you can use regular parboiled rice);
- shrimps;
- spinach;
- mackerel fish;
- garlic (chopped up into small pieces);
- onions;
- mushrooms (I love mushrooms, I add it to almost anything I eat);
- salt, pepper, maggi to taste
Method for fish:
- Wash fish and place in a clean bowl; Add chopped garlic, salt, pepper, maggi and mix together;
- set aside in the refrigerator to marinate for a little while.
Method for coconut rice & spinach:
- In a clean pot, add a cup of rice, drain water and add coconut milk; place on fire and add salt and one teaspoon of olive oil. Leave to boil;
- Pre-heat the oven to about 200 degrees celsius to grill fish;
- Place frying pan on the stove and put shrimps, mushrooms and onions to sautee for a bit; add spices (salt, maggi, and pepper at this stage);
- Place fish in the oven and leave to grill on both sides for about 15 - 20 minutes;
- Once mixed ingredients are nice and tender, add the spinach and cover to steam for 5 -7 minutes;
- Once spinach is steamed with other ingredients, mix together and you should have something that looks like this;
- By now the rice should be ready to be served alongside the fish and spinach;
- This is my final result! it tasted really good and do you notice my presentation, I used a tea cup to serve the rice and turned it into my plate and then carefully put the spinach sauce by the side and the fish as well. I am so proud of me...hehe
This dish is quick, fast and easy to make. I like it very much because I am an efo-riro (vegetable soup) lover and days when I do not want to the whole palm-oil business which is not the healthiest option, I go for this and I get the same taste and satisfaction from this as I would have had from efo-riro (vegetable soup). Also, the addition of vegetables, seafood and spinach gets me; a very good way to pack on the veggies if you ask me. I would like for you guys to try it and let me know what you think.
