How is the week going? I hope everyone is doing great. Sorry about my lack of updates lately. I had a craving for plantain sauce (plantain & gizzard) but was skeptical about it because of the amount of oil involved in making the dish. I decided to bake the plantain instead of frying them and it came out good. It could have been better if the sauce did not burn as I forgot it on the stove but none the less its a good recipe to try at home.
Ingredients:
- 2 Plantains;
- bell pepper;
- half a cooking spoon of crushed tomatoes;
- onions;
- scotch bonnet pepper;
- spice (salt, maggi) to taste;
- gizzard, tripe, kidney (you can add more varieties if you want);
Method:
- In a clean pot, boil gizzard, tripe, kidney. Once this is boiled, you can put it in the oven for a crispier taste and then set aside afterwards;
- Blend pepper, crushed tomatoes, onions and scotch bonnet pepper to get a not so smooth mixture and pour in a clean pot to boil (basically, the pepper mix should have a rough texture when felt)
- Dice plantain to go into the oven, sprinkle a teaspoon of olive oil on the plantain and also use olive oil to coat the baking pan to prevent the plantain from sticking to the pan;
- Set the oven to grill and throw in plantain for about 20 minutes turning at intervals;
- Pepper should be boiled now. Add some salt and maggi to the boiled pepper and put on low heat;
- Once plantain is ready, throw it into the pot of boiled pepper and throw in the gizzard and mix. Taste for spice and add as desired;
- Leave it to cook for about 5 -10 minutes and serve as desired as a side or main dish.
It came out better than I thought the only thing was that it burnt as I forgot it on the stove. Let me know if anyone tries this at home. Thank you guys for stopping by.
