I am so so sorry... I have been MIA....I am still trying to get used to this blogging thing hence the delay in posting regular updates...I am still very much here and I am preparing for my exams ATM. I honestly can not wait to be done my program and then comes the hard part...looking for employment...may God help his daughter.
Anyway unto the topic for the day..healthy eating, how is everyone doing with this? I know it can be a challenge trying to change your eating habit but trust me once you start to see the results, the motivation kicks in from there. All you need is a little bit of patience and time and you will start to see it. Ever since I got on my weight loss journey, I had to cut down on a lot of things including eating rice everyday as that is our staple food as Nigerians. This made me find different dishes to incorporate in my diet. Also, I am the type of person that does not like to eat same thing twice or thrice in a row. For instance, some people like my father can eat eba three days in a row. For me, once I eat a dish one day, I want something else the next and that gives me the motivation to come up with recipes in my head or I consult my friend 'google' for options.
I have some tips to share with you guys today. In the past few weeks, I have made some delish dishes out of healthy stuff. I had oven roasted potatoes and salmon with sweet chill sauce and it was YUM! This is one of my favourite dishes to make. I am sorry I do not have step by step pictures as to how I made it but I promise I would improve on my picture taking skills and provide step by step pictures. I would leave you guys with the recipe and you can try it at home and don't forget to thank me later :)
Ingredients:
Irish potatoes - 1 large sized/2 medium sized ;
Spices - Maggi, salt, grounded pepper (you can add as much spices as you want but I like to keep mine simple, the more the spice in the food the less appealing);
1 teaspoon extra virgin olive oil;
Fresh salmon
Method:
- Heat your oven to 200degrees;
- Wash potatoes and cut into wedges with back on;
- Place clean cut wedges in a bowl and add spices and one teaspoon of extra virgin olive oil;
- Mix potato and spices together - you could either use your hand to make sure the spice goes round or you can put the potatoes in a ziploc and mix together;
- Put away for a few minutes so the spice can settle in the potato;
- For the fish, wash the fresh salmon, place in a bowl and add spices. I have this jamaican spice I use, it pretty much has everything in it so I just use it to marinate my salmon;
- Put salmon away in the fridge to marinate;
- Line your baking pan with foil and dip your index finger in a little bit of oil and spread all over baking pan - this will prevent the potatoes from sticking to the pan when turning it to grill on the other side;
- Place potatoes on the baking pan and put in the oven to bake at 200degrees celsius;
- The potatoes usually bake for about 25 - 30 mins depending on how thick the wedges are;
- You can also place the salmon alongside the wedges midway into grilling them, they usually don't take that long to grill;
- Turn wedges on both side and make a fork can pass through easily and then you know it is ready to go down your system;
- Also check salmon to make sure it is thoroughly cooked before taking it out of the oven;
- Serve wedges with fish and sweet chili sauce on the side and voila you get this
PS: the wedges should come out golden brown on the outside, nice and soft on the inside..I know my picture looks dull..I promise to take brighter pictures from now on.
Though sweet potatoes are healthier than irish, I like the irish ones for grilling and sweet potatoes for boiling. Also, because I do not eat fries, this is the closest I can get to a fry-like meal (pardon my english si vous plait). Try this at home and let me know what you think...until next time...au revoir.
