Breakfast idea: egg & sausage

Hello,

How is everyone doing? I hope you are all having/have had a great weekend. I want to share my breakfast recipe with you guys. I had the urge to have egg but I did not want it to be boring so I did decided to add some veggies in it. I had something similar to this at IHOP during xmas holiday and was craving it today so I decided to make mine but the healthier way, enjoy!

Ingredients:
  • avocado (half);
  • egg white (I use 2 eggs because I usually throw the yolk from my egg away but you can get egg substitute from your local grocery store);
  • mushrooms (6 mushrooms);
  • onions (quarter of one onions);
  • salt (add to your desired taste);
  • extra virgin olive oil (one teaspoon);


Method:
  • In a frying pan, add a teaspoon of olive oil and place sliced avocado, mushroom, onions, and a pinch of salt;




  • stir until veggies are slightly brown and moist. Once moist, set it aside;
  • in another bowl, break egg in and do away with the yolk. Add a little bit of salt and whisk until mixture is even;
  • add a teaspoon of oil to frying pan and make sure oil is properly spread out all over so as to avoid egg from sticking to the bottom of the pan ( I used a non-stick pan so I did not have much difficulty with the egg getting stuck);
  • pour egg and leave to fry without turning. Add veggies to the middle when the egg is no longer runny and close (it is best to leave the heat on low so it would not burn on the other side);



  • turn over so the other side can cook as well; Once it is ready carefully slide it off the frying pan and onto a plate;
  • serve with anything of your choice and dig in! I had mine with extra lean turkey sausage and thin multigrain round buns I got from the grocery store.
