Hi people, how is everyone doing? I hope everything is great. How was the weekend? Mine was okay...did nothing major. Thank you guys for the taking time to check my blog and like I said I would like to know your thoughts and opinions on this journey called weight loss.
I want to share a quick recipe with you guys today and to be honest this came from me just thinking of what to eat for lunch. I took a little walk to the chinese store downstairs and I came up with this...it was YUM! don't forget to thank me later...hehehe
Ingredients:
- Fish (I think its sea hawk fish, I did not hear the man properly and after asking what kind of fish like 3 times I gave up);
- Ginger, 1 garlic clove, maggi, salt;
- Whole-wheat pasta;
- 1 Bell pepper, 1 fresh tomato, 1 onion & 1 scotch bonnet pepper (rodo);
- Olive oil;
Method for fish:
- clean fish well and place in a bowl; add maggi and salt and use hands to rub into fish;
- peel onions and cut into half, ginger, garlic and one piece of scotch bonnet pepper. Place peeled ingredients in the blender and crush for about 2 mins. Add a little bit of water till you get a paste like mixture;
- add blended mixture to fish and use a spoon to stir in (I won't advise you to use your hands because of the hot pepper);
- set aside to marinate in the fridge for about 15 mins;
Method for sauce:
- Dice tomato, bell pepper, scotch bonnet pepper and other half of onion;
- put one tablespoon of olive oil into a pot and leave to heat a little bit;
- once oil is heated add the diced tomato, pepper into the pot with a little bit of salt and maggi (I added a little of the ginger mix from the fish into the sauce);
- Leave to fry for about 15 mins.
- At this time you should be preparing to have the fish go into oven once the sauce is cooking away.
- pre-heat the oven to about 180 - 200 degree celsius and place fish on a foil pan. The fish should be nicely grilled in about 20 mins.
- sauce is ready when veggies are nice and tender, not too soft and not too hard. Fish is also ready when it begins to brown. You can have it with rice, potatoes, pasta, noodles.
Method for pasta:
- in a pot with boiling water add a teaspoon of olive oil and a pinch of salt;
- add pasta into boiling water and leave to cook for about 15 - 20 mins or once it is soft;
- drain excess water if necessary and serve with fish & sauce.
I did not want to add the fish into the sauce but I did it last minute and it did not turn out bad. I had it with noodles when I made it but did not take a picture and then had it with pasta today and took a pic to share with you guys :)
