Healthy lunch: Chow mein, veggies & chicken

Hello everyone,

How is it going? I hope the new month is treating everyone good! Its September, the year is almost over! I remember new years day like it was yesterday. Its amazing how the day turns into night and night into day everyday but anyway all I can say is thank God so far.

I wanted to share a quick recipe with you guys today. I came up with this recipe in my mind. I thought to do chicken and veggies as I have done before but I did not want it with rice. After pondering, I settled for chow mein noodles. I have never tried it before so I thought why not do it now, theres always a first time . I was not sure about the turn out even though I had all these things going on in my brain but it turned out great so I decided to share it with you guys.



Ingredients:

  • chow mein noodles;
  • diced chicken breast;
  • vegetables - mushrooms, broccoli, cauliflower, carrots;
  • chow mein Sauce;
  • olive oil;
  • onions;
  • spice to taste


Method: 
  • Place chow mein noodles in hot boiling water and leave to boil until soft;


  • in another pot or fry pan, add one teaspoon of olive oil, put chicken in and cook until there's no trace of any pink colour in it;

  • pour in vegetables and add salt and maggi; cover to steam;


  • once veggies are nice and tender and spice is settled in, add some of the chow mein sauce. Leave to cook for 5 mins, add more salt or maggi if needed. (I was going to use the black bean sauce in the picture but I tasted it, & did not like it at all. Luckily there was chow mein sauce lurking around somewhere so I used that instead);
  • by now the chow mein should be soft; toss it in the mixture and leave to settle in for about 3 mins;

  • it is ready to eat after about 3mins of cooking.


It tasted like a proper take-away from the chinese restaurant but cheaper and healthier! The fact that I was able to control what went in and what stayed out was good for me which is a very important thing to note when trying to shed off the excess pounds.
