Veggies & chicken sauce

Hello everyone,

How is everyone doing? I hope your week is going great. I am going to do a post on what I had for lunch. I had veggies, chicken and noodles. I had something similar at my family friends but decided to try mine with a twist of cause. Also, Nifemi has been telling me he wants vegetables which is weird because the last time I gave him veggies to school, he brought the food back the way I packed it and when I asked why he did not touch it he said 'because you put vegetables inside and I don't like it'. 

Ingredients:

  • veggies - brocoli, carrots, mushrooms;
  • skinless/boneless chicken breast or thighs (I used thighs);
  • soy sauce;
  • onions;
  • spice - salt, black pepper, chilli pepper;

Method:
  • Dice all ingredients and set aside for use (this will reduce chaos as this dish requires constant turning once you begin);
  • Steam brocoli and carrots in a different pot (this is up to you, you can add it at the  very end but I like my veggies slightly crunchy so I steam it first);




  • while broccoli is steaming, put a teaspoon of oil in a frying pan, add onions and chicken thighs;
  • add spices, a little bit of soy sauce (less than a teaspoon) and keep stirring until mixture looks brown;
  • add mushrooms to mixture and keep stirring; At this stage, taste for flavour and add desired spice if needed but not too much;

  • once mixture looks nice and blended in, add steamed carrots & broccoli, stir in properly and leave to simmer for about 2 mins. This would leave the veggies slightly crunchy (not too hard and not overly soft);



  • Serve with your choice of side or you can eat it alone...it is that tasty. I had mine with noodles and it was good! I was thinking to do rice but I was too hungry to boil rice :) so I opted for noodles.






This is a fast and healthy dish full of flavour and helps you keep the waistline in check. Please let me know if anyone decides to try it. Shout out to my newest follower mummy!  I love you.
