Fettucine pasta with Alfredo sauce

Hi everyone,

How is it going? I hope you all had a great weekend. I want  to share a simple, easy, tasty and healthy recipe with you guys. Alfredo sauce is known for its high calorie content because of its ingredients but here is  a recipe for low fat Alfredo sauce with fettucine pasta which tastes just as yummy.

Ingredients:

  • whole-wheat fettucine pasta;
  • skimmed evaporated milk;
  • turkey breast;
  • olive oil;
  • onions, garlic cloves, salt, chili pepper;
  • basil, grated cheese (optional);

Method:
  • place pasta to cook in a pot of boiling water and add a little bit of olive oil; leave the pasta to parboil for about 15 - 20 minutes;
  • while pasta is cooking, place turkey breast in a frying pan, add little bit of chili pepper and salt and stir fry until slightly brown;




  • once turkey breast is golden brown, set it aside in a bowl. Pasta should be parboiled at this point, excess water should be drained and set aside until its ready to be used;
  • in the same frying pan used to stir fry the chicken, add a spoon of olive oil and add garlic and onions;
  • fry garlic & onion until golden brown and add the milk in. I used more than half a can of the milk because the pasta was a large portion and also I wanted a bit of liquid with the pasta as well;



  • add turkey breast to the mixture stir a little bit and leave till bubbles start to form. This should be about 5 mins after the milk is poured in;

 

  • Once bubble forms, the pasta is ready to go in. Slowly toss the pasta in and stir gently. 
  • Leave pasta to cook for about another  5 - 8 minutes. You can taste for salt and add to your desired taste.

  • Once pasta is soft, it can be served with basil leaves and grated parmesan cheese on top of it;
  • I did not have mine with basil leaves or grated cheese because I did not have any at home;

I did not take pictures of the meal on my plate before I ate it because I was too hungry. My sister loved it though and she does not like alfredo sauce so thumbs up for me :) You can add veggies and substitute the fettucine pasta for any other type of pasta you desire. Also, you can substitute the turkey breast for chicken breast. It is a quick and healthy dish to prepare while keeping the calories in check. Please let me know if anyone tries this at home.
